Espadín (Agave Angustifolia)
The most common agave species in the production of mezcal. The Espadín agave plant is characterized by its thin, blue-green leaves and take about 6-8 years to mature. The mature piña (heart) of the plant can weigh between 200 to 400 pounds and is rich in complex carbohydrates that are essential for the fermentation which is why it makes for such a popular agave choice among Mezcaleros.
